Different Varieties of UPMA you can cook Easily
This cookbook covers different upma recipes which one can prepare easily . In the whole cookbook 1 cup refers to 250 ml which is enough for one person serving.
1. Sooji Rava Upma
Ingredients:-
- 1 cup sooji rave
- 1 medium-sized onion
- Vegetables as per taste like potato, beans, carrot, green peas
- 1 tbsp oil
- 1 tbsp ghee
- 2 green chillies, ½ inch ginger, curry leaves
- For tampering:- 1 tsp chana dal, 1 tsp urad dal, mustard seeds, jeers.
- Salt as per taste (1 spoon is enough for 1 cup)
- 3.5 cups water (This gives soupy consistency which is good to have. water can be adjusted as per need)
Preparation Steps:-
- Take a pan to add oil and heat it. Add tampering (mentioned above) and fry for a minute.
- Chop all the vegetables into small pieces and keep aside
- Now add the finely chopped onions, chopped green chilli, ginger, chopped vegetables, curry leaves. Add pinch of salt, put in low flame.
- Close the pan with a lid and get the veggies cooked for 3-4 minutes.
- Add 3.5 cups water to this mixture, salt and get the water boiled.
- when the water comes to a rolling boil, add rava slowly by mixing.
- Stir continuously with spoon otherwise lumps will be formed.
- Keep in low flame for 4-5 minutes and get the rava cooked.
- Lastly add about 1 tbsp ghee which gives good taste to the Upma.
- Serve Rava Upma hot with coconut chutney or any powders as available

2.Tomato bath or Kara bath
Ingredients:-
- 1 cup sooji rave
- 1 medium-sized onion
- 2 small tomatoes chopped
- 1 tbsp oil or ghee
- 1 pinch turmeric
- 2 green chillies, ½ inch ginger, curry leaves
- For tampering: – 1 tsp chana dal, 1 tsp urad dal, mustard seeds, jeers.
- Salt as per taste (1 spoon is enough for 1 cup)
- 3.5 Cups water.
Preparation steps:-
- .Take a pan add oil and heat it. Add tampering(jeera, mustard seeds, urad dal, chana dal) and fry for a minute
- Add finely chopped onions, green chilli, ginger, curry leaves. Add pinch of salt, put in low flame.
- Add chopped tomatoes, pinch of turmeric. Cover the pan with a lid and cook on medium heat until tomatoes are cooked.
- Add 3.5 cups water to this mixture, required amount of salt and get the water rolling boiling. You can taste the water and can adjust the salt consistency in this step
- When the water comes to a rolling boil, add rava slowly by mixing with ladle.
- Stir continuously otherwise lumps will be formed.
- Keep in low flame for 4-5 minutes and get the rava cooked.
- Lastly add about 1 tbsp chopped ghee which gives good taste to the upma.
- Serve rava upma hot with any chutney.

3.Broken wheat daliya
Ingredients:-
- 1 cup broken wheat
- ¼ cup moong dal
- Small inch ginger.
- 1-2 small six tomatoes
- 1 cup mix veggies (carrots, peas, beans,potato)
- 1 onion
- .2 green chilli
- 2 tbsp ghee (adjust)
- ½ tsp cumin (or jeera)
- 4-5 pepper corns
- Salt as per taste
- Curry leaves, coriander
- 5-6 cashew nuts
- Pinch of Turmeric Powder
- 5 cups water
Preparation Steps:-
- Take a pressure cooker Heat 1 Tablespoon Ghee add cumin seeds roast it for a minute then add chopped green chilli, curry leaves, pepper corns,cashews.
- .After that add chopped onion, ginger, chopped vegetables and cook for 2-3 minutes.
- Add 1 Cup of broken wheat and roast well till it turns aromatic and then add moong dal.(if u have time soak moongdal and can add)
- Mix well and add pinch of turmeric and salt as per the taste.
- Add 5 cups of water
- Keep the stove on medium flame and cook for 3-4 whistles
- Daliya kichidi is ready and can be served hot.

Note:-
- Broken wheat is good for weight loss and for diabetic patients
-
If you want to make as upma add 2.5 cups of water and can skip moongdal. This is called as wheat rava or goduma rava/bansi rava. Adjust the water depends on rava thickness.
4. Idli upma
Ingredients:-
- 5 to 6 idlis, crumble
- 1 tablespoon oil
- For tampering :- ½ teaspoon mustard seeds,½ teaspoon cumin seeds, ½ teaspoon urad dal, chana dal
- Peanuts
- 1 pinch of turmeric
- 5 to 6 curry leaves
- 2 green chilli, chopped
- 1 dry red chilli
- Salt as required
- Chopped coriander leaves
- 1 lemon
Preparation steps:-
- Take the idlis and mash the idlis well and keep aside
- Heat oil in a pan add peanuts and fry for a minute after that add mustard,cumin,urad dal and chana dal.
- Add chopped green chillies,curry leaves,coriander leaves and a pich of turmeric
- Saute for 1 to 2 mins add the mashed idlis and adjust the salt as per taste
- Mix very well and saute for a minute or two. Then switch off the flame. Lastly u can add Squeezed lemon juice which gives good taste.
Note:-This recipe can be prepared by adding onions and tomatoes also. This recipe can also be prepared with left over idlis

5.Poha/Avalaki
Ingredients:-
- 2 cups thick poha (flattened rice)
- ½ teaspoon turmeric powder
- salt as required
- 1 onion
- 2 tomatoes
- 2 tablespoon oil
- For tampering:-1 teaspoon mustard seeds,jeera,1 teaspoon chana dal,1 teaspoon urad dal
- 1 tablespoon peanuts
- 3 green chillies – chopped
- 8 to 10 curry leaves
- 1 medium onion
- chopped coriander leaves
Preparation Steps:-
- Rinse 1 cup thick poha in water for 2-3 times and leave it 2-3 minutes. After that drain the excess water with the strainer. The poha just need to get softened not mashed.
- Press the poha with finger tips and remove excess water from it and keep aside.
- Take a kadai heat 2 tbsp oil and add 1 tsp mustard seeds jeera,1 tsp chana dal,1 tsp urad dal, peanuts.
- Add 1/2 tsp turmeric powder, chopped onions, green chillies, curry leaves. Stir and saute till the onions turn translucent.
- Add the tomatoes and stir very well. Once the tomatoes are cooked well add then add the poha. Stir and mix gently. Check the taste and adjust the salt.
- Ensure that everything gets mixed evenly and cook on a low flame for 3 to 4 minutes.
- Lastly add 2 to 3 tbsp chopped coriander leaves and mix gently.
Note:-vegetables like potato and green peas can be added as per taste

Alternative methods:-
- Add the tampering and the grated coconut, green chillies. fry well and add the poha rice. At the end add lemon juice for taste. You can replace onions and tomatoes in this method.
- Squeeze lemon juice instead of tomatoes that makes as lemon poha.
6.Bread Upma
Ingredients:-
- 5 to 6 bread slices – cut in small cubes
- 2 tablespoon oil
- 1 teaspoon mustard seeds
- ½ teaspoon cumin seeds
- 1 medium onion
- 1 green chilli – finely chopped
- 6 to 7 curry leaves – chopped
- 2 medium tomatoes finely chopped. (Remove seeds)
- ¼ teaspoon turmeric powder
- ¼ teaspoon red chilli powder
- Salt as required
Preparation steps:-
- Chop the bread slices in cubes. Take a pan add ghee and fry the bread cubes for 2-3 minutes and Keep aside. you can use brown bread for good taste.
- Finely chop the onions, green chilli and tomatoes. Keep aside. Chop the curry leaves and coriander leaves.
- Heat 2 tbsp oil in a pan. Add 1 tsp mustard seeds and let them crackle and pop and then add 1/2 tsp cumin seeds. Stir and saute till the cumin seeds also crackle.
- Add chopped onion. Stir On a low to medium flame, saute the onions till they turn translucent.
- Add chopped green chilli 6 to 7 curry leaves, chopped. Stir and saute for about 10 to 12 seconds.
- Then add finely chopped tomatoes. Onions and tomatoes should be cooked well until the tomatoes soften and can see the oil releasing from the sides.
- Add 1/4 tsp turmeric powder, 1/4 tsp red chilli powder, salt. Mix very well and adjust the spiciness and salt .ensure there is no water once onions, tomatoes are cooked
- Add the bread cubes. Mix bread cubes on a medium flame
- Saute the bread cubes for 4 to 5 minutes till they become slightly crisp from the edges.
- Turn off the stove and serve with tomato ketchup.

7.Rice rava upma /Akki uppittu
Ingredients:-
- 1 cup rice rave
- 2 spoon moongdal (yellow or green)
- 1 tablespoon oil
- For tampering:-1 teaspoon mustard seeds,jeera, 1 teaspoon chana dal ,1 teaspoon urad dal
- 2 finely chopped green chili
- 2 dry red chili
- 5-6 curry leaves
- salt to taste
- 2.5 cups of water
Preparation Steps:-
- Wash and soak the moongdal 5-10 min so that it will be cooked easily
- Take a vessel add oil. once the oil is heated add the tampering .once the dal is roasted add the chopped green chilli, curry leaves and 2 red chilli(cut into 2 pieces).
- Add 2.5 cups and boil the water. Add the salt
- Once water is boiled add the soaked moong dal and the rice rava. Stir well with spoon for 2 minutes
- Turn off the flame and move the vessel to a pressure cooker.cook till 4 whistles
- Switch off the flame and rest until steams goes off. Once the steam goes off mix well and serve hot
- Mango chutney and curd is best combination for this rice rava upma
Note:-If instant rice rava is not available u can take 1 cup rice ½ cup moong dal and grind it as powder in the mixer. U can cook directly without pressure cooker but takes more time for cooking. Keep the flame in medium flame for 5-10 min if you want to cook directly so that rava will be cooked well.

8. Vermicelli bath/ Semiya Upma
Ingredients
- 1 cup semiya
- 2 cups water
- 1.5 spoon oil
- chopped carrots, onion, green chillies,beans, green peas
- 1 medium sized potato – peeled and chopped into thin cubes
- chopped tomatoes
- 5-7 curry leaves
- ¼ teaspoon urad dal
- ¼ teaspoon mustard seeds
- ¼ teaspoon cumin seeds
- 1 teaspoon salt or add as required
Preparation Steps:-
- Heat 1.5 tablespoons oil in a pan or kadai. Add ¼ teaspoon mustard seeds,cumin seeds,urad dal,chana dal. Once mustard seeds and cumin seeds crackle then add 10 to 12 curry leaves, then add ½ cup chopped onions. Saute and stir onions till they become translucent.
- Then add chopped green chilli, finely chopped vegetables. Add pinch of salt and close the lid and get the vegetables cooked for 3-4 minutes.
- Next add ⅓ cup of chopped tomatoes. Stir well. Saute for 2 to 3 minutes or till the tomatoes soften. Add salt as per taste and add the water.
- Once the water is boiled add the vermicelli (if needed roast the semiya and keep aside) Stir gently so that the vermicelli don’t break.
- Just cook for 2-3 minutes on low flame. Then switch off the flame.
- Garnish with some coriander leaves while serving and add some lemon juice before serving the upma.

9.Lemon Semiya Upma
Ingredients
- Semiya (Vermicelli) – 2 cups
- 1 Lemon – 1
- 3 Green Chillies – 2
- 2 Red Chillies – 2
- 2 pinch Turmeric Powder Oil – 2 tablespoons
- ½ teaspoon Mustard –
- 2 tspoon chana Dal
- 2 tspoon Urad Dal
- 2 spoons oil
- Pea Nuts
- Curry Leaves
- Coriander Leaves
- Salt as per taste
Preparation Steps
- Take a bowl Boil 6 cups of water add teaspoon of oil and salt. Once water gets boiled Add semiya and cook till it is soft.
- Remove from stove and drain the excess water. Immediately add cold water and rinse well. Drain all the water completely and transfer the semiya to a bowl and spread little.
- In a kadai add the oil and when it is hot add mustard seeds, jeera, chana dal, urad dal, peanuts, and fry till the dals turn light brown.
- Add sliced green chillies, curry leaves. Fry for few seconds.
- Add turmeric powder, salt and mix well. Now add the cooked semiya and mix it gently with the help of fork so that it won’t gets sticked. Mix well and switch off the stove.
- Finally add coriander leaves, lemon juice and mix it gently.

10.Puffed rice upma /uggani
Ingredients
- 3 – 4 cups puffed rice Murmura/
- 1 Onion chopped
- 2 Green chillies chopped
- 1 Tomato chopped
- 2 tbsp Peanuts
- For tampering:-1/4 tsp mustard seeds,jeera,1 tbsp urad dal,1 tbsp Chana dal
- 1 tbsp red chilli powder
- few Curry leaves
- 2 tbsp Oil
- salt as per taste
Preparation Steps:-
- Take puffed rice in a big bowl of water. Wash it well and remove the water.
- Add water and soak the puffed rice for 5 mins. Don’t keep in water for long time else they become very soft and mushy.
- Squeeze the puffed rice and remove excess water by transferring to a strainer.Take a kadai and add oil.
- Add all the tampering and add peanuts
- .Saute until peanuts are light brown in colour then add Onions, green chillies, curry leaves and add salt.
- Add tomatoes to the fried onions. Saute until the tomatoes are cooked. Lastly add puffed rice and mix well.
- keep on low flame and mix well for 2-3 minutes. Add red chilli powder for more spiciness
- Mix well and turn off the flame. leave it for 2-3 minutes and serve hot.

11. Little millet upma (Samai Upma)
Millets are very nutritious and is good for health. They are naturally gluten – free. Now a days everyone is considering Millets as alternative to rice. The more millet varieties will be introduced in our next articles.
Ingredients:-
- 1 Cup little millet
- 1 spoon oil
- 2 green chillies
- Curry leaves
- Salt as per taste
- 1 onion
- 1.5 cups of water
- Vegetables (carrot, beans, green peas)
- For tampering:-jeera, mustard, chana dal, urad dal
Preparation Steps:-
- Wash the Little Millet for 2-3 times and soak in water for at-least 15 minutes. (Soaking helps to cook faster and time saving)
- Heat a pan add oil and add mustard seeds, jeera, chana dal, urad dal. Once it is fried add chopped green chillies, curry leaves
- Then add onion. Saute for 1-2 minutes till the onion turns slight brown in color.
- Later add finely chopped vegetables, some salt and saute for 2-3 mins until vegetables are cooked well.
- Add 1.5 cups of water and allow this to boil.
- Drain the water from the soaked millet add to the boiling water and add the salt then Mix well.
- Cover with a lid and cook for about 8-10 minutes on low flame.
- Once little millet is turn off the gas. Leave it for 2-3 minutes and mix well.
